In this episode, Ainsley is on an island that is close to his heart, and one he’s visited many times – Barbados. Starting his Bajan adventure, Ainsley goes in search of some elusive Green Monkeys in a Welchman [Hall] Gully, famed for its lush vegetation and being the place where Grapefruits were first discovered.
Moving down to the south of the island, Ainsley visits Chef Damian Leach, at his restaurant Cocktail Kitchen. An innovator in Bajan cuisine, Damian has previously held the title of ‘Caribbean Chef of the Year’. With Ainsley’s help, Damian rustles up a dish of Roasted Breadfruit, Salt Fish and Lobster.
PRC Bakery is Ainsley’s next stop on this leg of his adventure, here head baker and owner Ramona, gives Ainsley a run through of their specialties – Barbados Meat Rolls, Coconut Rolls and Corn Biscuits. Inspired by the bakery, Ainsley makes his Pineapple French Toast with Caramelised Bananas.
A trip to Barbados for Ainsley wouldn’t be complete without a visit to his friend’s beach side snack stop: housed in a converted bus, Joel serves up traditional Bajan snacks including Fishcakes, Rotis and Flying Fish Cutters – as well as his homemade rum punch!
Finishing off his trip with a Barbados cocktail – Corn n Oil – made with Rum and Falernum – a spiced sweet syrup.
